Kind of pointless to have a "server distribution" for that sort of distro (just install the packages you want for your server?)
No, I wouldn't use Arch on a server (and cachyos pretty much follows or exceeds Arch). I'd have to be an asshole to use this for anything that anyone, anywhere is relying on. An Arch based distribution certainly would be viable for a server, but it would need to be more curated than either of those.
It depends on how serious the server is I guess, but you generally don't want unpredictability of new versions of software and libraries changing out from under foot.
